This is a combination of all my favorite foods, red onion, avocado, lime, peppers, tomatoes. It’s so fresh, healthy and perfect for summer, since it’s all raw food, no heating up the kitchen. It was a perfect side to our tortillas I told you about the other day. Something about the crunch of the red onion, the heat of the cayenne pepper, the sweetness of the bell pepper, it’s all good together. I know summer almost gone, but I’m holding on to it for dear life it seems, I just love food like this!

Guacamole Salad

  • 1 pint grape tomatoes, halved
  • 1 yellow bell pepper, diced
  • 1 can black beans, rinsed and drained
  • 1/2 cup small red onion, diced
  • 2 T minced jalapeno peppers, seeded (about 2 peppers)
  • 1/2 t grated lime zest
  • 1/4 cup squeezed lime juice (about 2 limes)
  • 1/4 cup olive oil
  • 1 t kosher salt
  • 1/2 t black pepper
  • 1/2 t garlic, minced
  • 1/4 t cayenne pepper
  • 2 avocados, diced

Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper and pour over the vegetables. Toss well.

Just before you’re ready to serve the salad, fold the avocados into the salad, so ensure they keep there shape and don’t brown. Serve at room temperature.

*I’ve brought this dish to our church picnic before and it works perfect since nothing needs to be kept cold*
