I was thrilled to see blueberries on sale this week, here’s a quick simple recipe for blueberry muffins!

Blueberry Muffins

2 cups flour
2 t baking powder
3/4 cup sugar
1 cup sour cream
2 eggs
1 t grated lemon rind
1/3 cup oil
1-1/4 cups fresh blueberries

Preheat the oven to 350 F. In a large bowl mix flour, baking powder & sugar; stir to combine.

Place the sour cream, eggs, lemon rind and oil in a bowl and whisk until smooth. Stir the sour cream mixture in the flour and sugar mixture until just combined.

Sprinkle over the blueberries and stir once. Spoon the mixture into buttered muffin tins until 2/3 full. Bake for 12-15 minutes or until golden brown.
