I could eat this stuff all day. I *love* avocados, especially guacamole. Try it on top of those chicken fajitas I showed you the other day, it will be a perfect compliment to your next fiesta.
Homemade guacamole
- 3 ripe avocados
- 1/2 cup minced red onion
- 1 serrano chile, minced
- 3 T chopped cilantro leaves
- 1-2 T fresh lime juice (depending on your taste)
- 1/2 t kosher salt
- 1/8 t black pepper
- 1/2 cup tomato, seeds and pulp removed, chopped
Place the avocado in a bowl & mash with a fork or I find a pastry cutter works like a charm. Add the onion, cilantro, lime, salt, pepper & serrano chile. *Make sure you add the lime juice pronto, it will keep your guacamole happy & green instead of sad & brown* Add the tomato just before serving.
Grab some tortilla chips, your finger, a spoon, whatever & give it a taste.

Just wanted to say that your blog makes me HUNGRY! You are such a good little cook! I wish I cooked that way…but I am too lazy (or maybe too busy??) We eat a lot of cheese crisp. LOL.
