I had some leftover buttermilk in the fridge so I whipped these beauties up for breakfast…

Butter, real maple syrup, powdered sugar makes buttermilk pancakes *happy*

Buttermilk Pancakes

  • 1 cup unbleached flour
  • 1 T sugar
  • 1 t baking powder
  • 1/4 t baking soda
  • 1/4 t salt
  • 1 egg
  • 1 cup buttermilk
  • 2 T oil

In a large bowl, mix the flour, baking soda, baking powder, sugar & salt. Make a well in the center of the dry ingredients & add the egg, buttermilk, oil. Stir just until combined. The batter will be lumpy. If you over stir you’ll end up with tough, rubbery pancakes. We want pancakes here not bologna. Anyways, once the batter is combined heat a pan with a little oil & cook pancakes until golden brown. Enjoy them, they’re swell…
