Red peppers have to be one of my all time favorite foods. I love them sliced up in a salad or simmering in a big pot of spaghetti sauce. Though I adore them much more roasted. If you have never tried to roast your own peppers or garlic for that matter you’ve got to try it! It’s so simple & the flavors they give you are so tasty. It’s not often I make an appetizer for dinner when it’s just Isaac & I at home, but every once in a while it’s fun, I’ve had this recipe saved for probably a year now, and my friends it did not disappoint.

Roasting peppers 101:

Take a washed & dried pepper, place it on a cookie sheet lined with foil…

Place pepper under the broiler set on hi, once skin has charred turn until all sides are black…

Remove pepper & place on bowl covered with plastic wrap or in a tightly closed paper bag. (we’re using the heat to steam this baby so the peeling will be a breeze!)

Once the pepper has cooled, peel the black charred skin from the pepper…

Remove the seeds and white membrane & slice it up…

Next is roasting garlic 101:

Take either a head of garlic or a couple cloves unpeeled…

Place garlic on a sheet of foil & drizzle some olive oil on cloves…

Wrap foil around garlic, place in a 400 oven & bake 30-45 minutes until garlic cloves are softened…

After the garlic has cooled, squeeze the garlic out of there skins…

Mash together & we’re ready for our crostini…

Roasted Red Pepper Crostini with roasted garlic and fontina cheese
recipe adapted from giada de laurentiis

  • 1 baguette loaf, sliced
  • 8 cloves roasted garlic
  • 4 tablespoons olive oil
  • 1 roasted organic red bell pepper, cut into strips
  • 3/4 cup grated fontina cheese

Preheat the oven to 375 degrees F. Arrange the bread slices on a baking sheet. Brush the oil over the bread slices. Bake until pale golden and crisp, about 15 minutes. Spread roasted garlic over bread slices, arrange the bell pepper strips on the bread. Sprinkle with the cheese. Broil until the cheese melts, about 2 minutes.
